BS Lasagna
Here's my take on BS (butternut squash) lasagna. It looks really messy, but it's super tasty... :)

Ingredients:
- 3 lbs. ground beef
- 1 can tomato paste
- 1 cup water
- 1 can diced tomatoes
- 2 tsp. oregano
- 2 tsp. basil
- 2 tsp. salt
- 1 large OR 2 small butternut squash
- Preheat your oven to 400F.
- In a stock pot (or large pan), brown the ground beef.
- While browning the beef, peel your butternut squash. Cut in half lengthwise and scoop out the seeds. Then, chop into 1/4 inch thick slices (or thinner if you like...I like mine chunky).
- When the meat is done, use some of the drippings to lightly coat a 9x13 Pyrex baking dish (to prevent sticking). Drain the remaining fat from the beef.
- Add the tomato paste, diced tomatoes, spices (oregano, basil, salt), and 1 cup water to the ground beef. Stir to coat.
- Place a layer of the butternut squash down in the greased baking dish. Top with the ground beef/tomato mixture. Repeat until everything is used...ending with a layer of ground beef on the top.
- Bake in a 400F oven for about 45 minutes...until the squash is soft (a fork should be able to go in/out smoothly).
- Let sit for 10 minutes and serve.
