Wassail


Ingredients:

  • 1.5 L apple cider (alcoholic or not...I've done both)
  • 2-4 apples, peeled, cored, and diced
  • 2-4 oranges, peeled and cut into wedges
  • 1/4 cup honey, optional (only if the original cider isn't sweet enough for you)
  • 1/8 tsp. nutmeg
  • 1/4 tsp. cinnamon
Directions:
  1. Place 1/4 of the cider into a medium-sized saucepan. Bring to a boil. 
  2. Add the apples, oranges, nutmeg, cinnamon, and honey (if needed) and let simmer, covered, on low/medium-low for about 30-45 minutes, until the apples are soft and the oranges have basically disintegrated. 
  3. When the apples are almost soft, pour the remaining 3/4 of the cider into a large saucepan and heat until warm but NOT boiling. 
  4. If desired, strain the apples and oranges from the spiced mixture before combining the 2 liquids. Serve warm.
