Gingerbread Men - Gluten free, Grain free, Dairy free, Nut free, and Egg free
Makes about a dozen, so double/triple if you want more.
Ingredients:
- 1/2 cup coconut oil (I know coconuts are technically tree nuts, but are generally not problematic for those with tree nut allergies. If they're problematic for you, feel free to substitute with your preferred fat (butter, lard, whatever).)
- 1/2-3/4 cup honey (depending on how sweet you like things...and if you're going to top them with any sort of icing)
- 1/4 cup molasses
- 1/2 tsp. nutmeg
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 4 tbsp. pureed applesauce
- 1-1/2 cups banana flour
- 1 tbsp. coconut milk, optional
Directions:
- Preheat oven to 350F.
- Mix the coconut oil, honey, and molasses in the top of a double boiler. Stir until melted and mixed.
- Add the nutmeg, cinnamon, salt, and applesauce and mix until combined.
- Remove from heat and slowly add in the banana flour. Mix until combined. The dough should be chunky and not smooth, but should form balls/clumps easily when pressed together. Add coconut milk to achieve the desired texture, if needed.
- Flatten until about 1/4 inch thick and press with cookie cutters.
- Place on a cookie sheet and bake for about 15 minutes, until slightly browned on the edges.
