Gluten Free Margherita Pizza

This is the BEST gluten free pizza I've ever made (or had, for that matter). Hard enough to hold as a slice like a regular pizza...with the crust both crunchy on the bottom and chewy on the top. It was perfection.

This recipe (the crust anyway) was adapted from http://minimalistbaker.com/the-best-gluten-free-pizza-crust-sauce/. I made one pizza...but it was fairly big (16 inches across).  So...the crust would probably make 1-2 smaller ones as stated in the link above.


Crust:
     Ingredients:

  • 3 cups gluten free flour (I used Bob's Red Mill 1:1 Baking Flour)
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 3 tbsp. sugar
  • 1 tsp. baking soda
  • 1 tbsp. vinegar (I used red wine vinegar...but white or ACV would be fine as well)
  • 2 cups warm water
  • 3 egg yolks
     Directions: 
  1. Preheat oven to 375 F. 
  2. In a bowl, combine the dry ingredients, except for the baking soda (flour, salt, baking powder, sugar). Mix thoroughly. 
  3. Add the egg yolks and warm water (only add enough water for the mixture to clump together...not be drenched). 
  4. Add the baking soda. Mix thoroughly. Then, add the vinegar and mix thoroughly. 
  5. Lightly coat a baking sheet with oil so that the crust won't stick (I used coconut oil and olive oil). 
  6. Oil your hands as well and gently push the crust out on the baking sheet. Start at the middle and slowly move the dough outwards until it's spread out to approximately 1/4 inch thick.
  7. Put the crust in the oven and bake for approximately 20-25 minutes, until the dough begins to look dry and cracks on the top a bit (totally normal and won't affect anything). 
  8. About 5-10 minutes before the crust finishes, make the sauce and prep the toppings (see below). 
 Toppings and Sauce: 
     Ingredients: 
  • 1 small can of tomato paste
  • water
  • 1 tbsp. sugar
  • 1 tbsp. salt
  • 1/2 tsp. dried basil
  • 4 large tomatoes
  • 8 leaves fresh basil
  • mozzarella cheese
     Directions: 
  1. Put the tomato paste into a bowl. Fill the can with water 1.5 to 2 times (depending on the thickness you want for the sauce), add the water to the bowl, and mix until the tomato paste and water are incorporated. 
  2. Add the sugar, salt, and dried basil. Mix thoroughly.
  3. Remove the crust from the oven and spread the sauce evenly onto the pizza. 
  4. Slice the tomatoes into 1/4" or less pieces and spread evenly on the pizza. 
  5. Dice the fresh basil and sprinkle evenly on the pizza. 
  6. Grate the cheese (or just cut thinly as I did in the pic above) and sprinkle evenly on the pizza. 
  7. Bake in the oven for another 15-20 minutes, until the cheese is melted. 
  8. Remove, cut, and serve.
