Tomato Pork

Serves 8-10.


Ingredients:

  • 3 lbs. pork tenderloin, cut into 1" cubes
  • 6-8 carrots, chopped
  • 4 zucchini, diced
  • handful of kale, chopped
  • 1 can diced tomatoes
  • 1 can tomato paste
  • 2 tbsp. salt
  • 1/4 cup Marsala wine
  • 1/4 cup red wine vinegar
  • 1 tbsp. honey
  • 1 tsp. sage
  • 1/2 tsp. cumin
  • 1/2 tsp. paprika
  • 1/4 tsp. cayenne pepper
  • 2-3 cups beef broth (or water)
Directions: 
  1. Preheat oven to 250F. 
  2. Place ingredients in a large stock pot and cooked, covered, in the oven for 6-8 hours...stirring very rarely. Basically, you want to check it to make sure everything's being covered with liquid...but you don't want to stir it too much because you don't want the pork to break apart/shred. 
  3. Serve as a soup, over cooked spaghetti squash, or atop rice or potato, if desired.
