Lemon-Lime-Honey Chicken
This had a very mild sweet/sour taste, but I really liked it...as did everyone else in my family (including my 1 y/o...who kept asking for more and saying "Mmm..." with every bite. lol). Serves 8 with generous portions, 10-12 if you give smaller portions.

- 2 whole chickens, cut up into pieces (wings, breasts, drumsticks/thighs)
- 1 lemon
- 1 lime
- 2 tsp. salt
- 1-2 tbsp. honey, melted enough to be easily pour-able
- olive oil or coconut oil
Directions:
- Preheat the oven to 375F. Drizzle some oil on the bottom of a roasting pan (without a rack insert, you want the chicken IN the juice while cooking).
- Place the chicken pieces into the roasting pan, skin side down. Sprinkle about 1 tsp. salt and drizzle the juice of 1/2 the lemon and 1/2 the lime over all the pieces. Flip the chicken pieces (skin sides up), drizzle with more olive oil, and repeat with the salt and juices.
- Bake in a 375F oven for about 45 minutes, until the chicken is cooked through and slightly browned.
- Turn the oven up to 400F, flip the chicken pieces again and drizzle with 1 tbsp. honey. Bake for an additional 2-3 minutes.
- Flip the chicken again, drizzle with the remaining 1 tbsp. honey, and bake for another 2-3 minutes. Remove and let cool for 5-10 minutes before serving.
NOTE: If you want even MORE of a sour flavor, you can cut up the lemon and lime skins and place them atop the chicken while cooking and/or add some red wine vinegar when you drizzle the honey at the end.
