Homemade Applesauce
Makes about 10-12 cups.
Ingredients:
- 15 apples, skinned, cored, and diced
- 1/4 cup honey (optional...added sugar is generally not needed, especially if you buy sweet apples to begin with)
- 1 tsp. salt
- water
Directions:
- Place the apples in a large stockpot and cover with water (note: they will float, so keep an eye and just do to about an inch above their original position)
- Add the honey and salt, if desired.
- Bring to a boil over medium heat, then reduce the heat to low, cover, and boil for about 45 minutes (they don't really need that long to cook, but I like them to be super duper soft and easy to mash). They'll change color slightly when they're ready.
- Drain as much of the liquid as possible (you could also keep the liquid and, voila, homemade (watered down, but still tasty) apple juice).
- Mash the apples with a potato masher or process in the food processor until they're the desired consistency.
- Store in the fridge for up to 3 weeks...or freeze for up to 9 months.
