Pork Ribs

Ingredients:
- 2.5 lbs. pork ribs (basically, I just did one long slab of ribs)
- 1 tbsp. salt
- 1 tbsp. paprika
- 1 tsp. cayenne pepper (if you don't want particularly spicy ribs, do less of this or omit it altogether)
- 2 tsp. cumin
- 2-3 tbsp. honey, melted (or at least easily spreadable)
- 1 tbsp. apple cider vinegar (or red wine vinegar)
- Preheat the oven to 250F. Prep a roasting pan. (I used a cooling rack placed atop an aluminum roasting pan...but, in the past, I've also used a large roasting pan with a removable rack. Point being, you want something that allows the fat/juices to drip off of the meat...and to not have the meat sitting in its own fat/juices while cooking)
- Combine the salt, paprika, cayenne pepper, and cumin together in a bowl.
- Rub both sides of the ribs with the spice mixture.
- Place the ribs on the rack rib side down and bake for 2-3 hours.
- Remove the ribs. Turn the oven up to its broil setting.
- Mix the honey and apple cider vinegar together. Baste one side of the ribs with the honey/vinegar mixture.
- Broil for 2 minutes. Flip the ribs, cover the other side with the honey/vinegar mixture, and broil for another 2 minutes.
- Allow the ribs to cool for about 10 minutes, then slice apart and serve.
