Primal Chicken Pizza
This recipe was adapted from the Chicken Crust Pizza recipe at http://fastpaleo.com/chicken-crust-pizza/. Serves 6-8.
Ingredients:
- 6-8 chicken breasts, pounded flat to about 1/4 inch thick (The easiest and least-messy way I've found to do this is to place one chicken breast between a ziploc bag where the sides have been cut open and pounding it with a rolling pin.)
- 8 oz. of mushrooms, sliced
- 1 can diced tomatoes
- 1 can tomato sauce
- 1 tsp. basil
- 1 tsp. oregano
- 2 tsp. salt
- 8 oz. mozzarella cheese (if you allow dairy), grated
- olive oil
- NOTE: Feel free to add any other toppings you like (pepperoni, bell pepper, onion, etc.). We're purists over here and like to keep things simple...but feel free to do what you like with it. :)
Directions:
- Saute the mushrooms. Add 1/2 tsp. of salt when almost finished.
- Add the tomato sauce, diced tomatoes, basil, oregano, and remaining salt (1 1/2 tsp.) to the mushrooms. Stir. Turn the heat to low and allow to lightly simmer, covered, while the chicken is cooking.
- Prep a baking sheet or two with aluminum foil. Set the oven to broil. Place chicken breasts on the baking sheet (I can usually get at least two per sheet), brushing both sides with olive oil, and broil for 1 1/2 minutes on each side (you want the meat about 2 inches from the heat while it's broiling...so move your oven racks accordingly).
- Remove and lower the oven temperature to 350F. Also, move the oven rack to the center position.
- Top the chicken breasts with the tomato pizza sauce mixture made before and, if you allow it, the cheese (If not, simply omit the cheese. It tastes fine without it.)
- Bake the chicken pizzas in the 350F oven for 10-15 minutes, until the cheese is slightly browned or the chicken is thoroughly cooked through.
- Repeat the process beginning with step 3 until all the chicken breasts have been cooked.
- Serve alone, with other veggies you like, or with a side salad and enjoy.
